Erica Teaching at ICE
Erica is one of the longest tenured Chef Instructors at the Institute of Culinary Education (ICE) in New York.
In addition to writing curriculum at ICE, She currently teaches in the professional culinary program and is a lead chef in ICE’s Special Events Department.
Erica is also Culinary Advisor to Streets International, a Global Social Initiative, based in Hoi An Vietnam. She spends several months a year in Hoi An, teaching culinary skills to disadvantaged kids, so that they may gain emplyment in Vietnam’s rapidly growing tourism and hospitality industry. She has also taught internationally at At-Sunrice in Singapore, and Culinary Salon Uno in Tokyo and in Bogota, Colombia. She is a guest instructor at the Culinary Vegetable Institute in Milan, Ohio.

I retired from cake decorating and catering wedding 10 years ago. But I still have all of my equipment because of my children 3 daughter, I promised I would make their wedding cakes.
